Stretching the definition of “One-Pot” When I think “One-Pot Meals” I think meals that have everything needed in…well…one pot. Stews come to mind. I’ll even take a stir-fry, since it’s just my husband and I, and I have pre-portioned rice frozen in Seal-a-Meal bags. So that’s a no-brainer, and the meal itself is still in one pot.Well, that isn’t quite the way these people view it. “One Pot” can be meat and veggies in one pot, like a mushroom and onion laden “Marsala Chicken Stew.” But most…
